Chocolate Fudge Brownies Wheat and Gluten Free

These Chocolate Fudge Brownies are wheat and gluten free and yes you can still enjoy a good brownie without those particular ingredients. These are a real taste sensation for both adults and children alike.

Ingredients:

  • 1/2 cup rice flour
  • 1/2 cup plain gluten-free flour (we used Orgran brand)
  • 1/4 teaspoon baking powder
  • 1/3 cup cocoa powder
  • 1 1/4 cups caster sugar
  • 2 eggs, lightly beaten
  • 150g butter, melted

Method:

  1. Preheat oven to 180°C. Grease a 4cm-deep, 20cm x 30cm (base) slab pan. Line with baking paper, allowing a 2cm overhang at both long ends.

  2. Sift flours, baking powder and cocoa into a large bowl. Add sugar. Stir to combine. Make a well in the centre. Add eggs and melted butter to flour mixture. Using a metal spoon, mix until just smooth.

  3. Spread mixture into prepared pan. Bake for 20 to 25 minutes or until a skewer inserted in the centre comes out with crumbs clinging.

  4. Remove from oven. Allow to cool in pan. Lift from pan. Cut into squares.

Vintage Chocolate Chip Cookies

Check out these Vintage Chocolate Chip Cookies.  So simple a recipe,  the kids will have a stack of fun baking them.  Great for the lunchbox or with morning/afternoon tea.  Fantastic little snacks!

Ingredients

  • 150g salted butter, softened
  • 80g light brown muscovado sugar (or just brown sugar)
  • 80g granulated sugar
  • 2 tsp vanilla extract
  • 1 large egg
  • 225g plain flour
  • ½ tsp bicarbonate of soda
  • ¼ tsp salt
  • 200g plain chocolate chips or chunks

 

Method

  1. Preheat the oven to 190C/170C fan-forced/gas 5.  Line two baking trays with non-stick baking paper.
  2. Put the butter and sugars into a bowl and beat until creamy. Beat in the vanilla extract and egg. Sieve the flour, bicarbonate of soda and salt over the mixture and mix in with a wooden spoon. Add the chocolate chips and stir well.
  3. Using a teaspoon, place small mounds of the mixture well apart on the baking trays. Bake in the oven for 8–10 mins until light brown on the edges and still slightly soft in the centre.
  4. Leave on the tray for a couple of minutes to firm up and then transfer to a cooling rack.

So simple and so yummy!
